Buffalo Trace Distillery has announced the release of Daniel Weller Spelt Wheat, the second expression in its experimental Daniel Weller series. Following the 2023 debut of Emmer Wheat, this limited-edition bourbon continues to explore how specific, heritage grain varietals alter the profile of a wheated mash bill. The line honors the legacy of Daniel Weller—the grandfather of William Larue Weller—who began distilling in Kentucky in the late 18th century.
The Role of Spelt in the Weller Mash Bill
Spelt is one of the world’s oldest cultivated grains but is rarely used in modern whiskey production. Primarily grown in Europe for artisanal baking, it was selected by the Buffalo Trace distillation team for its historical significance and its ability to impart a distinct nutty character. By using spelt as the secondary grain in place of the more common soft red winter wheat used in the standard Weller bourbon lineup, the distillery has created a profile that emphasizes subtle sweetness and earthy complexity.
Harlan Wheatley's Approach to Weller Distillation
Master Distiller Harlen Wheatley noted that the goal of this release was to let the grain's natural personality lead the way. Rather than utilizing specialized barrel treatments or secondary finishes, the liquid was aged for 10 years in standard oak to ensure the impact of the spelt wheat remained the focus. This methodology is consistent with the distillery’s broader approach to managing its various mash bills, where small adjustments to grain ratios or types yield significantly different results.
Tasting Profile of Daniel Weller Bourbon
Bottled at 94 proof, Daniel Weller Spelt Wheat offers a departure from the honey-forward notes found in younger Weller expressions. The nose is biscuit-forward, featuring aromas of baked cookies, clove, cinnamon, and nutmeg, supported by fresh fruit and oak. On the palate, the spelt introduces layers of dried fruit and baking spices, accompanied by a restrained, tea-like floral character. The finish is long and composed, with lingering notes of nuttiness and soft fruit.
Honoring the Weller Legacy
The series pays homage to William Larue Weller and the family's deep roots in American spirits. Daniel Weller, a pioneer who settled in Kentucky in 1794, helped establish the family's distilling reputation through a barter-based economy. Each bottle features a custom compass stopper; inscribed beneath it are the geographical coordinates of Daniel Weller’s original farm near Botland, Kentucky.

Daniel Weller Spelt Wheat will be available in limited quantities starting in March 2026. With a suggested retail price of $549.99, it sits as a premium offering from Buffalo Trace Distillery, alongside the annual BTAC 2025 release, Weller Millenium, and standard Weller releases, such as which includes Weller Antique 107, Weller 12 Year, and Weller Full Proof.
