Ingredients

  • 4 oz Light Rum, divided
  • 1 oz Fresh Lime Juice
  • 1 oz Simple Syrup
  • 4-5 Fresh or Frozen Strawberries
  • 2 oz Cream of Coconut
  • 2 oz Pineapple Juice
  • 2 cups Ice, divided

Instructions

  1. Prepare the Pina Colada: Combine 2 oz of rum, cream of coconut, pineapple juice, and 1 cup of ice in a blender blend until smooth. Pour the mixture into a separate container and rinse the blender.
  2. Prepare the Strawberry Daiquiri: In a clean blender, combine the remaining 2 oz of light rum, the fresh lime juice, the simple syrup, the strawberries, and the remaining 1 cup of ice and blend until smooth.
  3. Pour the Strawberry Daiquiri mixture into a large glass, filling it halfway.
  4. Carefully and slowly pour the Pina Colada mixture over the back of a spoon into the same glass. This will create the distinct layered look.
  5. Garnish with a fresh pineapple wedge or a strawberry.
Pro Tip
Using frozen strawberries will help achieve a thicker, more slushy consistency for the Daiquiri layer, which makes it easier to layer on top of the Pina Colada. Ensure both mixtures are thick for a clean separation.
