Everything You Need to Know About the Toronto

The Toronto is a rich, satiny-smooth classic that bridges the gap between an Old Fashioned and a Manhattan. While it relies on the spicy punch of Canadian whisky, the star of the show is Fernet-Branca, which lends a deep, herbaceous bitterness and a distinct cooling mint finish. It’s a "bartender’s favorite" because it is bold and unapologetic, but balanced out by the earthy sweetness of maple syrup, a dashe of aromatic bitters, and the bright oils of an orange twist.

Instructions

  1. Add the whisky, Fernet-Branca, syrup, and bitters into a mixing glass with plenty of ice.
  2. Stir for about 30 seconds until the drink is very cold and properly diluted.
  3. Strain into a rocks glass over one large ice cube.
  4. Express an orange twist over the surface and drop it in.
Pro Tip
Fernet-Branca is incredibly potent. If you are new to its "medicinal" flavor, start with an 0.125 oz (a barspoon) and work your way up. Also, using maple syrup as the sweetener is a popular modern riff that adds a woody depth that simple syrup just can't match.

Try the Apple Toronto: swap the Canadian whisky for 2 oz of Applejack or Apple Brandy. The fruit-forward sweetness of the apple softens the medicinal punch of the Fernet, creating a flavor profile reminiscent of a spiced autumn orchard.
