Located in New York's Hudson Valley, Hillrock Estate is one of the last distilleries Dave Pickerell worked on before his untimely passing in 2018. Hillrock is one of the only American distilleries to grow its own grains, and floor malt on site. Their award-winning whiskeys are truly field-to-glass. The Double Cask ryes are aged in new, char-3 American oak barrels, then finished in different casks and bottled at various proofs.
