The Bee's Knees Is A Taste Of Honey With A Kick

Though it sounds like something your grandpa might say and was created during Prohibition, there's nothing outdated about the Bee's Knees. Using honey syrup and fresh squeezed lemon juice to soften the kick of gin, it's similar to such whiskey cocktails as the Gold Rush and Honey Bey. Crisp and refreshing, with tart and sweet elements, it's perfect for brunch menus or served with appetizers at a dinner party.

How to Make a Bee's Knees

  1. Add gin, lemon juice, and honey syrup to a shaker filled with ice.
  2. Shake well until thoroughly chilled (about 15-20 seconds).
  3. Double strain into a chilled coupe glass.
  4. Garnish with a lemon twist.

To make honey syrup combine equal parts honey and hot water in a small saucepan over medium heat. Stir until the honey is fully dissolved. Let cool before use. Store in the refrigerator in an airtight container.
