Beam Distilling Co.'s Clermont campus in Kentucky, this limited-release 8-year-old straight bourbon was distilled at 115 proof, placing it between the High and Low Distillation Profile expressions. This intermediate approach preserves more grain-derived compounds than higher-proof distillation while producing a lighter distillate than the 105-proof expression, illustrating how relatively small adjustments during production can affect the finished bourbon.
