Doc Swinson's is a scrappy boutique distiller located deep in the corner of northwest Washington. We know because we trekked out there. It's closer to Canada than Seattle. Their operation is anchored by Jesse Parker, a creative young distiller with a knack for blending, finishing and solera aging sourced whiskey.
