The Paloma’s exact origins are hazy, but the tequila-and-grapefruit highball emerged in Mexico during the 20th century and eventually became one of the country’s signature cocktails. OJ Lima created this Pineapple Paloma as a party-sized spin on the classic tequila cocktail. Served from a one-gallon jar with a spout, the self-serve batch combines tequila, grapefruit and pineapple with fresh pineapple staves, plenty of ice and soda water—all in one container.
